The Fagor Professional M-G915BM Kore 900 Series 150L Gas Bain Marie Boiling Pan is a high-capacity commercial cooking appliance designed for professional kitchens that need controlled, uniform heating for large-volume food preparation. With a substantial 150-litre capacity and 24kW Natural Gas heating system, it is well suited to restaurants, hotels, catering facilities, hospitals, aged-care kitchens and institutional foodservice operations. Using an indirect Bain Marie heating system, the M-G915BM surrounds the cooking well with a heated water chamber, providing gentle and even heat transfer across the cooking vessel. This makes the boiling pan particularly effective for preparing large batches of soups, sauces, stocks, stews and other liquid or temperature-sensitive foods while helping reduce the risk of direct heat scorching.
The unit features a robust AISI 304 stainless-steel construction, with an AISI 316L stainless-steel bottom to the cooking well. Its 2mm stainless-steel worktop, robotic-welded well, laser-cut joints and concealed screws provide a durable and hygienic construction suited to intensive commercial use.
Operation is designed for straightforward kitchen workflow. Hot or cold water can be introduced through an electrically operated valve controlled by a single front-mounted switch, while the well can be emptied through a 2-inch safety valve fitted with a heat-resistant handle. A removable AISI 304 stainless-steel drain filter helps simplify cleaning and maintenance.
The M-G915BM incorporates optimised stainless-steel tubular burners controlled by an energy regulator and pressure switch. This system allows the appliance to manage heat output efficiently while supporting lower water and energy consumption.
