A heated holding cabinet makes more sense for high-volume kitchens, caterers or venues that need to hold large batches across multiple GN pans simultaneously. Think about how many pans you need to hold at once, then match the unit capacity to that number rather than buying up or down.

How do I work out the right size bain marie for my menu?+

Start by counting the number of menu items you need to hold during a single service period. Each item typically occupies one GN pan position, so a three-pan unit suits a short menu and a larger cabinet suits a broader one. Also consider your counter or pass space — measure the footprint before you buy, because benchtop models vary considerably in depth and width.

Do bain maries and food warmers need a dedicated power circuit?+

Most benchtop models run on a standard 10-amp outlet, but larger heated holding cabinets often require a 15-amp or hard-wired connection. Always check the electrical specification on the product listing before ordering, and have a licensed electrician confirm your switchboard can handle the load. Fitting the wrong unit to an underpowered circuit is a safety issue, not just an inconvenience.

Can I use a bain marie outdoors or in an unenclosed servery?+

How do I clean a wet bain marie properly between services?+

Drain the water reservoir fully at the end of each service, then wipe down the interior with a food-safe sanitiser. Mineral scale from tap water builds up over time, so descale the reservoir regularly using a commercial descaler suitable for stainless steel. Remove and wash GN pans separately. Never submerge the unit's electrical components and always allow it to cool before cleaning.

What maintenance does a heated holding cabinet need?+

Wipe interior surfaces down daily and clean door seals regularly to keep them pliable and airtight. Check that door hinges and latches are aligned so heat does not escape during service. On units with humidity controls, clean the water tray or humidity system according to the manufacturer's guide. Consistent maintenance keeps holding temperatures stable and extends the life of the cabinet.

Are GN pans included with bain maries, or do I need to buy them separately?+
