Cooks Knife 20cm
The 20cm wide blade of the KH Kharve Master-Cut Knife offers precision for a variety of cutting tasks.
Its size provides a balance between control and cutting power, ideal for handling larger ingredients.
The versatile design excels in slicing, dicing, and mincing, ensuring efficient and precise food preparation.

German Steel
This knife uses German stainless steel, a premium metal that boasts exceptional hardness, excellent corrosion resistance, and outstanding durability.

HRC 57±1
The knife boasts a HRC rating of 57±1, reflecting the official Rockwell Hardness rating of the metal.
A higher rating signifies greater hardness, meaning the blade will maintain its edge longer and resist dulling over extended use.

X50 CrMoV15
Constructed from X50 steel with 0.5% carbon content, which is hot forged and ice hardened.
Raising the HRC rating to match that of a 0.7% carbon blade or X70 steel, ensuring superior edge retention and durability.

Ice Hardening
The cryogenic process dramatically changes the molecular structure of the base metal.
After the knife had been forged, it is subjected to a dramatic temperature decrease of minus 70C° for up to 3 hours.
Resulting in a blade featuring sharpness and outstanding edge retention.

Triple Riveted Handle
The full-tang, triple-riveted handle offers great durability and strength by extending the blade’s metal through the entire handle.
Furthermore, by improving balance and control, moreover, the secure rivets ensure a firm, comfortable grip that additionally stays tight over time.
