The Fagor Professional FMD-2302A 1230L Dry Aging Meat Cabinet is a premium commercial meat-aging solution designed for butcher shops, restaurants, steakhouses, hotels, gourmet food retailers and hospitality businesses specialising in aged meat. Combining controlled refrigeration, humidity management and professional display capabilities, the FMD-2302A provides a dedicated environment for dry-aging meat while allowing products to remain highly visible to customers.
With a generous 1230-litre capacity and two hinged glass doors, the cabinet is designed for businesses that need substantial aging capacity without sacrificing product presentation. Its refrigeration system can be precisely adjusted from 0 to +20°C in 0.1°C increments, while the integrated humidity thermostat provides control from 60% to 90% to support different aging requirements.
The FMD-2302A uses ventilated refrigeration to promote homogeneous temperatures throughout the cabinet. An integrated ultraviolet light system assists with air sterilisation, while heated glass and door frames help minimise condensation. Perimeter LED lighting, adjustable by remote control, further enhances the presentation of hanging meat, salami and other premium aged products.
Built for intensive professional use, the cabinet features a fully stainless-steel construction and uses R455a refrigerant. Automatic defrost water collection and evaporation eliminate the need for a dedicated drain connection, helping simplify installation. The cabinet is also designed for demanding environments up to 40°C ambient temperature under Climate Class V conditions.
Measuring 1697mm wide × 632mm deep × 2300mm high and requiring a 240V, 3.37kW, 15A electrical supply, the Fagor FMD-2302A is a substantial commercial installation. It is delivered in two sections, with the removable upper section containing the complete refrigeration unit to make transportation and installation more manageable.
