Question 1

What does a blast chiller actually do?

Accepted Answer

A blast chiller forces chilled air across hot food at high velocity, dropping the core temperature from cooking temperature down to safe refrigeration temperature far faster than a standard cool room or fridge can manage. That rapid chill limits bacterial growth in the danger zone, extends shelf life and keeps food tasting the way it left the stove. Shock freezers do the same job but push the core all the way down to frozen temperatures.

Question 2

What types of blast chillers are available at Chefs Depot?

Accepted Answer

The range covers several form factors. Countertop and underbench units suit smaller kitchens or patisseries with limited floor space. Upright cabinet models handle larger batch volumes on GN trays. Roll-in blast chillers accept a full trolley loaded straight from the oven, which suits high-volume production. Combination blast chiller freezers let you switch between chilling and shock-freezing cycles on the one machine, so you are not buying two separate units.

Question 3

Blast chiller or shock freezer — which one does my kitchen need?

Accepted Answer

A blast chiller brings food down to refrigeration temperature, typically around 3 degrees C at the core, and is the right tool when you are prepping ahead and storing for service within a day or two. A shock freezer pushes the core to around minus 18 degrees C, preserving food for longer storage without the ice-crystal damage that slow freezing causes. Many kitchens benefit most from a combination unit that handles both cycles, so you have flexibility across different prep workflows.

Question 4

How do I size a blast chiller for my kitchen?

Accepted Answer

Capacity is usually described in kilograms per cycle or in the number of GN trays the unit accepts. Match the unit to your largest single batch — the amount of food you pull from the oven or cooktop at one time. A small cafe doing a few trays of pastries has very different needs to a catering operation pulling full hotel pans. Most units in our range sit somewhere between 3-tray countertop models and large roll-in cabinets, so there is a size for most kitchen footprints.

Question 5

Do blast chillers need a dedicated power circuit?

Accepted Answer

Larger models, particularly roll-in and high-capacity upright units, typically draw enough current to warrant a dedicated circuit. Smaller countertop units often run on a standard commercial outlet. Always check the electrical specifications on the product page and have a licensed electrician confirm your switchboard can handle the load before installation. Units with remote condensers also need condenser placement factored into the installation plan.

Question 6

Can a blast chiller be used for both savoury and pastry production?

Accepted Answer

Yes. Blast chillers are equally at home setting chocolate ganaches, firming butter-based pastry and chilling cooked proteins. The key is that the rapid chill works on any food that needs its temperature dropped quickly. Some of the Tecnomac models in our range include an ozone sterilisation cycle, which helps maintain hygiene inside the cabinet between uses — a useful feature in kitchens that switch between raw and cooked product.

Question 7

How do you clean and maintain a blast chiller?

Accepted Answer

The interior should be wiped down after each cycle using food-safe sanitiser, and the door gaskets checked regularly for any tears or build-up that could affect the seal. The evaporator coils need to be kept clear of ice build-up, so running a defrost cycle as recommended by the manufacturer matters. Remote condenser units need the condenser coils cleaned periodically to keep airflow efficient. Always follow the cleaning schedule in the manual specific to your model.

Question 8

What is the difference between a remote condenser and a self-contained unit?

Accepted Answer

A self-contained blast chiller has its condenser built into the cabinet, which simplifies installation but adds heat to the kitchen. A remote condenser unit pipes the heat rejection outside or to a separate plant room, keeping the kitchen cooler and often allowing the compressor to work more efficiently in warm environments. Several Tecnomac models in our range are built specifically for remote condenser configuration, which suits busy kitchens where ambient temperature runs high.

Question 9

Which brands of blast chiller does Chefs Depot stock?

Accepted Answer

Chefs Depot carries blast chillers and shock freezers from Friginox, Williams, Tecnomac, Polaris, Friulinox, Zanussi, Lainox, Polar, Atosa and IRINOX. Each brand brings a slightly different focus — some lean toward high-volume production, others toward compact footprints or advanced sterilisation features — so there is genuine choice across the range rather than a single approach to every kitchen.

Question 10

What do blast chillers cost, and do members get a better price?

Accepted Answer

Pricing varies considerably across the range, from smaller countertop units through to large roll-in models with remote condensers. Entry-level units sit at a more accessible price point, while high-capacity or feature-rich models sit higher. Chefs Depot members save off RRP across the full range, so registering before you buy is worth doing. All orders ship Australia-wide, and the product pages carry current member and non-member pricing for direct comparison.
