Dishwasher Racks & Baskets

Dishwasher racks and baskets are the purpose-built inserts that hold crockery, glassware, cutlery and cookware securely inside a commercial dishwasher or glasswasher during a wash cycle. They keep items separated so water and detergent reach every surface, and they protect fragile pieces from banging together. Most are made from coated wire, moulded plastic or a combination of both, and they are designed to be stacked, transported and stored efficiently in a busy kitchen.

You'll find plate racks, flatware and cutlery baskets, glass racks, bakery rack adaptors, rack adaptors for specific machine models, and height-adjustable transport trolleys for moving loaded racks between the wash area and service. Brands across the range include Washtech, Winterhalter, Hobart, Carlisle, Classeq, Aristarco, Vogue, Rational, Convotherm and SMEG Professional, so there is strong coverage whether you run a small cafe machine or a large flight-type washer.

Plate racks use vertical dividers to stand plates upright, keeping them stable and letting spray arms clean both faces. Flatware baskets hold loose cutlery in individual compartments or open-top cylinders so forks, knives and spoons do not nest together and come out clean. Most kitchens need both. If your bottleneck is cutlery turnover, add extra flatware baskets. If plates are coming out spotted, check that your plate rack divider spacing matches your plate diameter.

Rack sizing is tied to the internal basket opening of your machine, most commonly expressed as a footprint in millimetres. The two most widespread commercial sizes are 400 mm and 500 mm square, though some machines take a 450 mm or 600 mm rack. Always check your machine's manual or the manufacturer's rack compatibility list before ordering. Many of our Washtech, Hobart and Winterhalter racks are listed with the compatible machine model to make matching straightforward.

Sometimes, yes. If the footprint dimensions match your machine's opening, a rack from another brand will often fit and function correctly. The risk is in the detail: guide rail height, corner bumper clearance and lid clearance can vary between manufacturers. For mission-critical items like plate racks on a busy service, we recommend sticking to racks listed as compatible with your machine model. For general-purpose baskets on standard-sized machines, cross-brand use is common in commercial kitchens.

Most racks drop straight into the machine with no tools required. Adaptors, such as bakery rack adaptors or rack adaptors for specific glasswasher models, may require you to clip or slide them onto an existing rack or into the machine's guide rails. Transport trolleys for mobile plate racks are typically assembled from a small number of parts. Always follow the manufacturer's setup guide, as incorrect fitting can affect wash performance and may void the machine's service agreement.

Rinse racks after each service shift to remove food debris and detergent residue. Inspect coated wire racks regularly for chips or cracks in the coating, as exposed metal can rust and contaminate ware. Plastic racks should be checked for warping, which can cause items to tip during the cycle. Store racks dry and stacked off the floor when not in use. Replacing worn racks promptly protects your crockery and keeps wash results consistent.

Yes. Several Rational and Convotherm rack and trolley accessories in our range are designed primarily for oven loading and plate holding rather than dishwasher use. Rational mobile plate racks, for example, are engineered to move plated dishes from the oven to the pass efficiently. Check each product listing carefully to confirm whether a rack is intended for warewashing, oven use, or both, as the materials and temperature ratings differ between applications.

A useful rule of thumb is to have enough racks in rotation so that one set is in the machine, one is being unloaded and one is being loaded at the same time. For high-volume services, most operators run more than that to avoid bottlenecks during peak periods. The right number depends on your cover count, your machine's cycle time and how quickly your team can turn racks. Buying a few extra racks upfront is far less costly than a service delay mid-shift.

Prices vary widely depending on rack type, material, brand and compatibility. Basic flatware baskets and standard glass racks sit at the lower end of the range, while branded plate racks, transport trolleys and specialised adaptors for combi-oven systems sit higher. Members save off RRP on every item in this category. If you are outfitting a new kitchen, buying a matched set from a single brand often works out more economical than mixing individual pieces.
